Chicken Mince Meatloaf — Low Fat Air Fryer Recipe

This easy chicken mince meatloaf is made entirely in the air fryer, and it’s become one of my most-repeated dinners since my gallbladder came out.

Traditional meatloaf is usually made with beef mince, often with a fair bit of fat running through it, and that’s exactly the kind of meal that used to leave me uncomfortable for the rest of the evening. This version uses lean chicken mince instead, which brings the fat right down without losing the comfort of a proper home-cooked dinner.

Mix everything in a bowl, press it into a 1lb loaf tin, and let the air fryer do the rest. No frying, no basting, no fat to drain off. Around ten minutes of work and half an hour of leaving it alone.

It’s also naturally gluten free, since it uses cornflour rather than breadcrumbs to bind.

WHY THIS CHICKEN MINCE RECIPE WORKS AFTER GALLBLADDER SURGERY

Without a gallbladder, bile drips into your small intestine steadily rather than being released in a concentrated dose when you eat. That’s fine for smaller amounts of fat — it’s the rich, heavy meals that tend to cause trouble, because there simply isn’t enough bile on hand to deal with them at once.

This chicken mince meatloaf keeps things comfortably on the right side of that line:

Chicken mince is naturally lean — far lower in fat than the beef or pork mince traditionally used in meatloaf
No added fat in the mix — no oil, butter or fatty binder
Air fried, not pan fried — the air fryer crisps the outside without any additional oil
Gently seasoned — tarragon and paprika rather than chilli or heavy spice, which some people find irritating in the early months
Gluten free — cornflour does the binding job that breadcrumbs usually would

One thing worth checking: chicken mince varies quite a bit between brands. Look for one labelled lean or breast mince if you can — some standard chicken mince includes skin and thigh meat, which pushes the fat content up considerably. It’ll be on the packet.

INGREDIENTS

Serves 4 · Makes one 1lb loaf

500g lean chicken mince (ground chicken)
2 large eggs, or 3 medium
3 tbsp cornflour
1 onion, finely chopped
1 tsp salt
1 tsp ground black pepper
1 tsp dried tarragon
1 tsp paprika

On the eggs: these are the binder, and they’re essential to the texture. If you’re particularly sensitive to egg yolk in the early weeks after surgery, you can use 3 egg whites plus 1 whole egg instead — the loaf holds together perfectly well and it drops the fat a little further.

HOW TO MAKE GROUND CHICKEN MEATLOAF

STEP 1 — Soften the onion

Line a 1lb loaf tin fully with baking paper.

Soften the chopped onion in a small pan with 2 tablespoons of water rather than oil, over a medium heat, until translucent — about 5 minutes. Set aside to cool slightly.

Why water rather than oil: raw onion can be difficult to digest for some people after gallbladder surgery, so it’s worth softening it. But there’s no need to fry it in fat to do that — water works just as well and keeps the recipe as low in fat as possible. If you’d rather use a little oil, a light spray of olive oil is plenty.

STEP 2 — Mix and fill

Put the chicken mince, eggs, cornflour, salt, pepper, tarragon and paprika into a large bowl, then add the softened onion.

Mix together by hand until just combined. Transfer to the lined loaf tin and level the top with the back of a tablespoon.

Don’t overmix. Working the mince too much makes the finished loaf dense and rubbery. Stop as soon as everything is evenly distributed.

STEP 3 — Air fry

Set the air fryer to 180°C / 350°F and cook for around 32 minutes.

Check the centre with a meat thermometer — it needs to reach at least 74°C / 165°F.

Let it stand in the tin for 5 minutes before lifting it out. This matters more than it sounds — it lets the loaf firm up so it slices cleanly instead of crumbling.

Slice and serve.

WHAT TO SERVE WITH CHICKEN MINCE MEATLOAF

Keeping the sides low in fat is what makes this a genuinely comfortable meal rather than just a lower-fat main.

  • Mashed potato made with skimmed milk and a splash of the cooking water, rather than butter and cream. Season generously and you won’t miss it
  • Steamed green beans or broccoli — simple, and easy on digestion
  • Roasted carrots, peppers and courgette, tossed in a light spray of oil rather than a drizzle New potatoes with the skins on, which adds a bit of fibre alongside
  • A simple salad with a lemon and balsamic dressing rather than an oil-based one

Cold leftovers in a wholemeal sandwich the next day are excellent — and using wholemeal rather than white keeps things moving, which matters more than you’d think on a lower fat diet.

HOW TO STORE CHICKEN MEATLOAF

Let the meatloaf cool completely, then store it in an airtight container in the fridge for 3–4 days.

To reheat, slice and warm through in the air fryer for a few minutes, or in the oven. Slices reheat better than a whole loaf and stay far moister.

It’s very good cold too, which makes it a genuinely useful thing to have in the fridge when you want something easy that won’t upset you.

CAN YOU FREEZE CHICKEN MEATLOAF?

Yes, and it freezes very well.

Wrap the cooled loaf tightly in cling film, then a layer of foil, and freeze for up to 2–3 months.

Slice it before freezing and layer with baking paper between each slice. You can then take out one or two portions at a time, which is far more useful than defrosting the whole thing.

To reheat: thaw overnight in the fridge, then warm in the air fryer or oven until it reaches 74°C / 165°F in the centre.

FAQ’s

Is chicken mince meatloaf suitable without a gallbladder?

Yes. Lean chicken mince is naturally low in fat, and this air fryer meatloaf recipe adds no oil or butter, which makes it far gentler than a traditional beef meatloaf. As always, start with a smaller portion if you’re newly post-op and see how you get on.

Can I make this ground chicken meatloaf in the oven?

Yes. Bake at 180°C / 350°F for around 45–50 minutes, until the centre reaches 74°C / 165°F. The air fryer is quicker and gives a slightly better crust, but the oven works perfectly well.

Why is my chicken meatloaf dry?

Chicken mince has less fat than beef, so it’s easier to overcook. Use a meat thermometer and take it out as soon as it hits 74°C / 165°F, and always let it rest for 5 minutes before slicing.

Can I use turkey mince instead?

Yes — lean turkey mince works exactly the same way and is just as low in fat. Cooking time is unchanged.

Is this air fryer meatloaf recipe gluten free?

Yes. It uses cornflour rather than breadcrumbs to bind, so it’s naturally gluten free. Do check your cornflour packet if you’re coeliac, as some brands note cross-contamination.
