Easy Carrot and Parsnip Soup
When the weather turns chilly, there’s nothing better than a bowl of homemade soup. This easy carrot and parsnip soup is one of my favourite recipes because it’s simple to make, naturally lower in fat and full of comforting flavour.
I’ve been living without a gallbladder for over 20 years, and homemade soups have always been one of my go-to meals. They’re gentle, filling and a great way to enjoy plenty of vegetables without relying on rich or heavy ingredients.
Made with everyday vegetables, garlic, ginger and vegetable stock, this soup with carrots and parsnips is smooth, naturally creamy (without adding cream) and perfect for lunch, a light dinner or batch cooking for the freezer.

Ingredients
You’ll need:
- 1 tbsp olive oil
- 1 onion, diced
- 500g parsnips, peeled and chopped
- 500g carrots, chopped (no need to peel)
- 2 garlic cloves, crushed
- ½ tsp fresh grated ginger
- ½ tsp dried chilli flakes (optional)
- 1 litre low-salt vegetable stock
- Salt and black pepper
Optional additions
- 1 tsp ground cumin
- 1 tsp mild curry powder
- Fresh thyme
- Fresh parsley
- A squeeze of lemon juice

Step-by-Step Method
Step 1
Heat the olive oil in a large saucepan over a low heat. Add the onion and cook gently for around 5 minutes until softened.
Step 2
Increase the heat slightly and add the chopped parsnips. Cook for 3 minutes, stirring occasionally, until they begin to caramelise around the edges.
Step 3
Reduce the heat and stir in the carrots, garlic, ginger and chilli flakes. Cook for another minute until fragrant.
Step 4
Pour in the vegetable stock and season with salt and black pepper. Bring to the boil, then reduce to a gentle simmer for around 20 minutes until the vegetables are completely tender.
Step 5
Blend until smooth using either a jug blender or a stick blender.
Step 6
Return to the pan if needed, adjust the seasoning and serve warm with your favourite bread or homemade croutons.
Rachel’s Tips
- Frying the parsnips first gives the soup a lovely caramelised flavour without roasting them.
- Use low-salt vegetable stock so you can season to your own taste.
- Blend for a little longer than you think—you’ll get a much silkier soup.
- If ginger or chilli doesn’t suit your digestion, simply leave it out. The soup is still delicious thanks to the natural sweetness of the carrots and parsnips.
- This recipe is ideal for meal prep because the flavours develop even more the next day.
Storage
Allow the soup to cool completely before transferring it to an airtight container.
Store in the fridge for up to 3 days.
Reheat gently on the hob or in the microwave until piping hot, adding a splash of water or stock if the soup has thickened.
Freezing
This carrot and parsnip soup freezes beautifully.
Allow it to cool completely before freezing in individual portions or freezer-safe containers for up to 3 months.
Defrost overnight in the fridge and reheat thoroughly before serving.
